food & drink: Cinnamon Toasted Biscotti
I made this biscotti this time because I was a baking addict. After reading a few recipes, I only have the least ingredients on hand.
Biscotti has a history of several centuries in Italy. Due to the way Biscotti is baked, the moisture in the biscuits is dried and becomes non-perishable and resistant to storage. According to legend, it was the best choice for sea voyages, long-term voyages. They all carry this kind of biscuits that can be stored for a long time.
The following formula is suitable for about 10 pieces.
material :
1 cup all-purpose flour (125 g)
3/4 teaspoon of cinnamon powder
1/2 tsp of baking powder
1/8 teaspoon of salt
1/4 cup of white sugar (48g)
1/4 cup (36g) brown sugar
3 tablespoons (43g) butter (room temperature)
Large egg (room temperature) 1 for making biscuits, 1 for brushing egg mixture
Vanilla extract 1/2 tsp
Sugar (for sprinkling on the surface) 1 tablespoon
Cinnamon powder (for sprinkling on the surface) 1/2 tsp
Practice :
1. Preheat the oven to 325 degrees Fahrenheit (162 degrees Celsius)
2. Line the baking tray with baking paper.
3. Mix flour, cinnamon powder, baking powder and salt, set aside.
4. Mix butter, brown sugar, and white sugar, and beat with a whisk until fluffy.
5. Add eggs to step 4, beat well at low speed and add vanilla extract.
6. Add the dry ingredients in step 2 to the egg mixture and mix well with a spatula.
Pour out the dough and place it on baking paper.
7. Press with wet hands to form a rectangle 23 cm long and 3.8 cm thick. Brush the surface with egg wash.
8. Put it into the oven and bake for 35-40 minutes. The dough will expand a little during the baking process.
9. Take out the dough and let it cool on the baking sheet for 20 minutes. Do not turn off the oven, keep the temperature.
10. Mix the white sugar and cinnamon powder for decoration and set aside.
11. Put the dough on the chopping board carefully, and use a sharp knife to cut into strips, about 2 cm wide.
12. Put the cut side down, put it on the baking tray, and sprinkle the mixed powdered sugar prepared in step 10. Put it back in the oven and bake for 20 minutes. Turn it over halfway through the roast.
13. After taking it out, let it cool completely on the grill and keep it sealed.
