This pumpkin Coquito is a perfect autumn cocktail!
Pumpkin Coquito is a welcome cocktail in autumn. Like my original Coquito recipe, this famous Puerto Rican drink contains rum, cinnamon and whole creamy coconut essence.
However, this time, I added pumpkin puree to the new (and possibly even improved) seasonal version. The rich pumpkin blends perfectly with the warm, warm cinnamon flavor.
If you are also a fan of eggnog, you will definitely fall in love with this Coquito, just like the first time I had it on my first Puerto Rico Christmas many years ago. Coquito is sometimes called Puerto Rican eggnog, but I personally think it tastes much better than the American version of eggnog!
What is Coquito?
Coquito, or "Little Coconut", is essentially a sweet and creamy rum mixed with coconut cream, coconut milk, and plenty of cinnamon. It is an important staple of Puerto Rican culture and a traditional drink you will see at almost any holiday celebration.
This Puerto Rican holiday drink is easily affected by many other flavors, but pumpkin seems to be suitable for next month!
Formula ingredients
Here are the ingredients needed to make pumpkin Coquito:
Dark rum
Cinnamon sticks
Sweetened condensed milk: create a creamy consistency!
Coco Lopez: also known as coconut cream (this is different from coconut cream or coconut milk!)
Coconut milk
Pumpkin puree
Evaporated milk
Spices: cinnamon powder, nutmeg and cloves
Vanilla extract
Shredded coconut: This is optional, but can provide additional flavor and thickness to your Coquito.
Pumpkin puree: You want to make sure to buy pure pumpkin puree, not pumpkin pie filling. Pumpkin puree is made from 100% pumpkin, and the back of the jar should only show the ingredients of the pumpkin.
How to make pumpkin cookies ?
Mix: Add rum and cinnamon sticks to a very large pitcher with a lid (or two large jars with lids-this will produce about 70 ounces of liquid).
Soaking: Let the rum and cinnamon sticks sit for an hour or a few days! This is an optional step, but it does increase the overall cinnamon flavor!
Tips for the best Coquito :
Here are some tips for making the best Coquito:
Shake well before drinking: The beverage will separate when stored in the refrigerator, so please remember to shake it before drinking again.
Use a powerful blender: you want to make sure your kola nuts are puree until they are completely smooth and the coconut shreds are smooth too!
Add pumpkin pie spice: If you are a big fan of pumpkin, this will add more rich flavor!
Coconut cream: If you are not used to buying this ingredient, you may be a little confused. You want to make sure you buy coconut cream-not coconut cream. Coconut cream is also commonly referred to as Coco Lopez (the popular brand that makes it). You will often find it in the drinks/cocktail section of the store. It is sweetened with sugar and contains real coconut flakes.
How to store leftovers
You can store the remaining Coquito in an airtight container in the refrigerator for up to two weeks-if it lasts that long!
The drinks will separate in the refrigerator, but this is perfectly normal! Just shake vigorously or stir well with a spoon, then eat as usual.
You can also pour this pumpkin Coquito into a large glass jar at any time and add a gorgeous orange bow to it to make a beautiful gift for your friends/neighbors!
This pumpkin Coquito is absolutely divine and addictive! The smooth flavours of coconut, pumpkin and cinnamon combine to make the perfect autumn treat. I know that adding pumpkin will make it a non-traditional coquito, but for any pumpkin lover, it is very delicious!
