Start making:
First add 5 grams of salt to 270 grams of high-gluten flour and mix well. Try to avoid salt contact with yeast, otherwise it will reduce the activity of yeast.
Add 35 grams of sugar, 10 grams of milk powder and mix evenly, and add 3 grams of dry yeast.
Beat in another egg and slowly add 120 grams of water (If the room temperature is higher than 24 degrees Celsius, it is best to use ice water, so that the noodle temperature will not rise too quickly)
Use a cook machine to mix all the ingredients evenly and knead the dough for about 10 minutes to form a smooth dough.
Add 25 grams of butter softened at room temperature and continue to knead until the butter is fully absorbed by the dough until the dough is smooth (about 10 minutes)
Spread a thin layer of cooking oil on a large bowl, put it in the dough, cover with plastic wrap and ferment to 2 times its size. (Finger poke holes in the fermented dough without retracting)

Cover the noodles with a napkin or plastic wrap for 15 minutes.
