Fajita seasoned chicken and vegetables make up this delicious low-carb air-fried chicken fajita salad. The crispy lettuce is topped with tender air-fried chicken, air-fried vegetables, and topped with avocado and sour cream.



Healthy Air Fried Chicken Fajita Salad

This Air Fryer Chicken Fajita salad is rich in protein, a few calories and a lot of flavor from the chicken marinade. The chicken is tender and juicy when it comes out, and the vegetables are slightly grilled, which tastes good, but still adds texture.


Put some creamy avocado in every bite and your taste buds will be in heaven! This chicken salad recipe is both a healthy lunch option and a light and nutritious dinner. Bonus: its carbohydrate content is also very low!

The chicken fajita salad is everything you put in the chicken fajita, minus the tortillas. This is a list of all the ingredients you need:


Chicken Marinade: You need olive oil, lime juice, fresh garlic (chopped), smoked paprika, cumin and salt.

Chicken: Chicken breast and chicken thighs work well in this recipe. No matter which one you decide to use, make sure it is boneless, skinless and whole.

Chili: I like to use 1 yellow bell pepper and 1 red bell pepper, cut into strips. I also like to add 1-2 jalapenos, deseed and slice. (However, jalapeno is optional.)

Onion: Cut into thin slices.

Lettuce: Chopped romaine lettuce is my personal first choice, but you can also use green leaf lettuce.

Avocados: sliced-gently squeeze to make sure they are ripe. If they give a little, they can be eaten. You can also use guacamole!

Garnish: Cilantro, chopped.

Optional ingredients: sour cream, 1 lime (cut into wedges and squeeze on top) and chili flakes (for seasoning).




How to make this chicken fajita salad?

Another element I like about this meal is that it only takes about 30 minutes! And, if you cook chicken and vegetables ahead of time, this is one of the easiest dinner/lunch ever.


Marinated chicken breast

Mix the ingredients together: In a small bowl, combine all the marinade ingredients to prepare the marinade. Stir well.


There is a bowl of marinade next to the chicken.


Marinate chicken: Spread the marinade on the chicken pieces and let stand for 10 minutes or up to 24 hours.



Coat chicken with marinade in an air fryer.


Air fried chicken

Place chicken in an air fryer: If your air fryer needs to be preheated, preheat your air fryer to 360°F. Put the chicken nuggets in the air fryer, being careful not to crowd them.



Set the timer to 10 minutes: then turn the chicken nuggets. Place the peppers in groups between the chicken pieces. Put the onion and chicken in the air fryer together.

Cook the chicken longer: depending on the chicken, cook for another 5-12 minutes. Check the temperature of the chicken with a meat thermometer from time to time. Once the internal temperature reaches 165°F, your chicken is complete. Don't overcook the chicken, otherwise the chicken will become dry.

Arrange the vegetables: In a large salad bowl, add lettuce and coriander. Take out the vegetables and place them on top of the lettuce. Add the avocado to the salad.
