Cocoa Sandwich Cookies with Condensed Milk Caramel Sauce

Material :

Condensed Milk Caramel Sauce

Condensed milk 160g

A pinch of salt

Vanilla paste 2g

Cocoa biscuits

Low-gluten flour 180g

Cocoa powder 20 grams

Salt 1g

Baking powder 1g

100 g butter softened

60 grams of white sugar

1 egg

Vanilla paste 5g

Extra white sugar for garnish


Practice :

1. Condensed milk caramel sauce : 

preheat the oven to 215 degrees, pour the condensed milk into a 22cm baking pan, then add salt and stir evenly, wrap the baking pan with a layer of tin foil, and place the baking pan on a larger oven pan In the middle, pour boiling water in a large baking pan to about half of the position; bake for about 1 hour and 15 minutes, and bake until golden brown and caramelized. You can check it at 45 minutes and add water if needed. Chill for 15 minutes, add vanilla paste and stir smoothly, seal and store in refrigerator.👇



2. Cocoa biscuits :

Mix low-gluten flour, cocoa powder, salt and baking powder evenly. In another bowl, beat butter until fluffy and light. Add sugar and beat evenly. Then add eggs one by one, beating completely each time before adding another egg. Then add vanilla extract and mix well.


3. Sift in all powders and mix with a spatula until there is just no dry powder. Wrap it in plastic wrap and keep it in the refrigerator for at least 1 hour.



4. Preheat the oven to 175 degrees Celsius, roll the refrigerated dough into a dough sheet of about 6mm, use a biscuit cutter to cut out the shape, after pressing, use a small heart-shaped mold to cut a star hole in the middle of half of the biscuit .



5. Put the prepared biscuit dough on a baking tray, sprinkle with white sugar, and bake in the oven for 9-11 minutes. Take it out and let it cool for about 2 minutes, then transfer it to the grilled mesh and cool it down completely.



6. Flip the bottom with a complete cookie, squeeze the caramel sauce in the middle, take a cookie with a star on it, and fill the gap. Keep tightly sealed and refrigerated.
