Grid Apple Pie!
There are many desserts made with apples, the most classic of which is apple pie! material :
Butter 60g (pie crust)
Low-gluten flour 180g (pie crust)
1 egg (pie crust)
40g caster sugar (pie crust)
Water 30ml (pipe)
2 apples (filling)
Lemon juice 5ml (with filling)
10g cinnamon powder (with filling)
60g caster sugar (with filling)
Corn starch 10g (with filling)
20g butter (with filling)
How to make cinnamon lattice apple pie :
1. Cut the butter into small cubes, soften it at room temperature, and put it into a clean container; sift in the low-gluten flour with a mesh sieve, and pour the sugar in the pie crust ingredients;
2. Knead it with your fingers until the flour and butter are mixed and knead into a pellet, which resembles coarse corn flour;
3. Separate the egg yolk and egg white, and add the egg yolk and water to the flour together;
4. Knead the flour into a smooth dough by hand.
5. Wrap the dough with plastic wrap and put it in the refrigerator to relax for about 1 hour.
6. Wash the apples, peel them, and cut into small cubes;
7. Heat the pot, turn on a small fire, put the butter in to melt;
8. Put in the diced apple and sugar, stir fry together, mix the cornstarch and water, and pour into the pot.
9. Cook until the softness and hardness you like, add lemon juice, add cinnamon powder and stir well, then let cool.
10. Sprinkle some flour on the chopping board and divide the loosened pie crust into two portions (2:1). Roll it into thin slices, a pie dish slightly larger than 6 inches in size;
11. Spread a large portion of pie crust on the pie pan and press lightly with your hands to make the pie crust tightly on the pie pan. Use a rolling pin to roll over the pie pan, cut off the excess part; use a fork to evenly make some small holes on the bottom of the pie crust;
12. Put the filling into the pie plate, the surroundings are the same height as the pie plate, and the middle part is slightly higher;
13. Press the junction between the grid and the pie pan with your fingers to cut off the excess pie crust and make the grid and the bottom pie crust stick together;
14. Cut the remaining small pieces of pie crust into strips of roughly the same thickness; arrange the strips on the pie in the vertical direction, and then take a long strip across the vertical strips horizontally and up and down to make a cross grid in turn; Brush the surface of the grid with egg wash.
15. Preheat the oven at 200°C and bake at the same temperature for about 25 minutes until the surface of the apple pie is golden brown.
