Lemon Sandwich Cookies




Lemon + passion fruit, a simple lemon biscuit base sandwiched with sweet and sour curd sandwiches, simple and delicious biscuits just get it! The butter is not as strict as other frosted cookies, and the sugar content is very low and lemon juice is added, so it can't be reduced any more.

The taste of this sugar content is sweet and sour, and the little cuties who like to eat sweet can add some sugar in moderation; really don't habitually reduce sugar after seeing dessert recipes! The amount of lemon juice is reduced and the sugar is only left with sourness ԅ(¯﹃¯ԅ)

All purpose flour 210g

100g softened butter

lemon zest one piece

Lemon Juice 30ml

30g honey

Lemon Passion Fruit Curd Toppings

Lemon Juice 56g

Passion Fruit 75g

Candy 80g

25g corn starch

30g coconut milk

8 grams butter

pinch of salt


practice :


1. Stir together the butter, lemon zest, lemon juice and honey. Sift in the flour to form a biscuit dough. Wrap in plastic wrap and refrigerate for 15 minutes.




2. Preheat the oven to 160 degrees and prepare the baking pan.

Roll out the dough into a sheet of about 6mm, cut out the cookie pattern and put it on the baking sheet. Bake for 12-15 minutes, until the edges are golden brown. Remove and let cool until completely cooled.




3. Curd production:

In a saucepan, combine lemon juice, passion fruit, jelly, cornstarch, coconut oil, and salt over medium heat, stirring constantly, until thickened. Then add coconut milk, mix well, remove from heat and set aside for later use.




4. Squeeze the curd into the middle of the biscuits to make a sandwich assembly and you're done!  Really don't cut sugar anymore !





Tips:


1. You can use coconut oil for butter, it will be more fragrant!


2. The amount of lemon juice and sugar in the biscuit is not sweet, and the jelly in the curd can be increased, because the sweet and sour is slightly more sour. Personally, I feel that I should increase it a little more, and the extra curd can be used for other spreads.


3. The weight of the passion fruit used to make the curd is after the seeds have been removed. Wrap it in gauze and squeeze out the passion fruit juice. The taste will be worse with the seeds!
