Red Velvet White Chocolate Sandwich Cookies



It is said that there is a sandwich cookie called "Lady's kisses", which is famous for its shape like "two lips kissing". The first time I saw someone make it, I thought it was super cute and cute.

But it seems that the traditional recipe is a lot of butter and sugar, so the taste is very crisp and the calories are high.

Later, I saw the practice of other teachers and changed it to corn oil, but the amount is not large.

So I learned from it and made it into a red velvet flavor. Although it has less oil, a lot of almond flour is added in the recipe, so it is still crispy. Coupled with the sweet and savory Baiqiao sandwich, the overall taste and taste are rich, and the small one is just right to relieve cravings. material : 

45g low-gluten flour

Almond Flour 45g

Cocoa Powder 2g

20g powdered sugar

Corn oil 25g

milk 15g

A few drops of red food coloring

15g white chocolate


How to make Red Velvet White Chocolate Sandwich Cookies:


1、Sift together flour, cocoa powder, and powdered sugar.

2、Then add the almond flour and mix.

3、Add corn oil.



4、Mix with a spatula until there is no dry powder

5、Add the red food coloring to the milk and stir to combine.



6、Then pour into the flour mixture and mix to form a dough.



7、Take a measuring spoon of a suitable size, and then take a piece of dough and press it into the spoon, pressing it firmly.



8、Then push it with your hand to remove it. ❗️About the way of shaping, if you have a better way, of course, but I personally think it is easier to use a measuring spoon.



9、Arrange the shaped balls evenly on the baking sheet.

10、Put it in the middle layer of the preheated oven at 170°C, and bake for 15-17 minutes. After it cools, cut it open and see that the overall color is uniform. It is cooked. Let it cool at room temperature for later use.




11、Cut the white chocolate into a piping bag, tie the bag tightly, put it in hot water to melt the chocolate, and cut a small slit.


12、Take a cookie, squeeze the chocolate in the center, cover with another cookie and you're done.



❗️Here’s a little suggestion. After the chocolate is completely melted, let it sit at room temperature for a while or refrigerate for 2 minutes to make the chocolate slightly hard, so that it is easier to operate when bonding two biscuits.

13、Don't touch the finished biscuit for a while, let the chocolate solidify, so that the bond is more stable.



Tips :

1. When buying coloring, buy food coloring with better quality, don't worry about the amount of this little bit at all. If you are particularly concerned about pigment, you can use red yeast powder to color, but the color may not be so positive.
